If you’re looking for healthy, baby friendly cake, look no further!
Originally created as Jubilee cake, these spiced baked oats taste like a delicious banana bread. But with no added sugar, an additional source of protein and iron from the oats, and a delightful arrangement of berries on the top, it's treat for every day!

❄️Can be frozen for up to 3 months
Ingredients:
1.5 cups oats
1 cup milk of choice (I used oat milk)
A banana
1 tsp baking powder
1 tsp ground cinnamon
1 tsp vanilla extract
1/4 tsp ground nutmeg
Strawberries and blueberries* to decorate
Method:
-In a food processor combine the oats, spices and baking powder, then blitz to make a slightly course consistency (or use a finely milled porridge such as Ready Brek)
-In a separate bowl mash the banana, then mix in the milk and vanilla
-Combine wet and dry ingredients then mix thoroughly
-Grease a baking tin with some coconut oil and pour in the oat mixture
-Thinly slice your strawberries and half the blueberries
-Arrange the sliced berries on top of the oat mixture into the shape of the Union Jack (or any other design you like!)
-Bake at 180c fan for 20 minutes
-Allow to cool slightly before serving
TOP TIP: Any leftover baked oats can be sliced into bars and popped in the freezer for up to 3 months for lunch on the go!
